Apple Cinnamon Oatmeal

Serving size: 2

Ingredients: 

  • 2 cups water 

  • 1 cup rolled oats

  • 1/4 tsp salt 

  • 1/4 tsp cinnamon 

  • 1 apple of your choice 

  • honey or maple syrup

  • pecans 

  • optional topping- any fruits of your choice, granola, nut butter

Instructions:

  1. Add water to a medium pot and boil over medium-high heat 

  2. Add oats, salt and cinnamon and stir well 

  3. Add in the apple slices and reduce the heat to simmer for 10 minutes 

  4. When the apples are tender, add in the honey or maple syrup and pecans 

  5. Add your favorite topping!

Whole Wheat Strawberry Pancake

Ingredients:

  • 1 egg 

  • 1 and 1/3 cup sliced strawberries 

  • 1 cup whole wheat flour 

  • 1 cup buttermilk

  • 1/4 cup flaxseed

  • 1/2 cup whole milk 

  • 1/4 cup sugar

  • 1/4 cup vegetable oil 

  • 1 and 1/2 tsp baking powder 

  • 1/2 tsp baking soda

  • 1/4 tsp vanilla extract 

  • 1/4 tsp salt 

Instructions: 

  1. In a medium sized bowl, combined whole wheat flour, flaxseed, sugar, baking powder, baking soda, and salt. In another bowl, combine egg, buttermilk, whole milk, sugar, vegetable oil, and vanilla extract. ​

  2. Add the dry ingredients into the wet ingredients and mix well. Combine the strawberries.

  3. Pour the batter onto a heated griddle to the desired size. Cook until bubbles come through the pancake then flip over. Continue until all the batter is used up.

Spinach Mushroom Scramble Eggs

Serving size: 1

Ingredients: 

  • 2 large eggs 

  • 2 large egg whites

  • 1/8 tsp salt

  • 1/8 tsp pepper

  • 1 tsp butter or oil

  • 1/2 cup thinly sliced mushrooms

  • 1/2 cup chopped spinach

  • 2 tbsp provolone cheese

Instructions:

  1. In a bowl, whisk eggs, egg whites, salt and pepper until incorporated. 

  2. In a nonstick skillet, heat butter or oil over medium-high heat.

  3. Add mushrooms and stir for 3-4 minutes until tender then add spinach until wilted. 

  4. Add the egg mixture and stir until the eggs thickened. Add in cheese.

Pina Colada Overnight Oatmeal

Serving size: 1

Ingredients:

  • 1/2 cup rolled oats

  • 1/2 cup coconut milk* 

  • 1/4 cup Greek yogurt or dairy-free yogurt

  • 1 tbsp chia seed

  • 1 tbsp maple syrup

  • 1/4 cup small diced pineapple*

  • 1 tbsp unsweetened shredded coconut*

  • 1/4 tsp vanilla extract

Instructions:​​​

  1. Combined all the ingredients into a resealable jar.​

  2. Mix well and let it sit overnight. 

Note:

* You can replace the pineapple with any fruits you like.

* You can also replace the coconut milk with a milk of choice 

* The shredded coconut can be replaced with any nuts if desired 

* Feel free to mix and match to your desired flavors and taste
